Unlike traditional cold pressed olive oil, our olives are not exposed to heat during production. Our unique process presses the olives so cold that you can actually feel the difference on the maxilation tank between our ice pressed(R) and cold pressed olive oil.

Character. Produced from traditional Koroneiki olives freshly harvested by hand at the beginning of the season, Kalios olive oil 0Character0 reveals intense aromas and a final touch of pepper.
Smoothness. It is only at the very end of the season that the fully matured Koroneiki olives are harvested by hand to produce this extra virgin olive oil. Kalios "Smoothness" stands out for its lightness and delicacy in the mouth.

Production method
The olives are crushed just a few hours after picking, ensuring maximum freshness and polyphenol levels. The oil mill is environmentally friendly and produces no waste. The only residues are pomace, which is transferred to a processing plant, the olive pits, used to power the biomass furnace, waste waters and vegetation waters, treated by a purification plant and reused to wash the olives, and finally mud, used as a fertilizer on farms after a short drying period.
Origin
Favuzzi extra-virgin olive oil is produced in the small village of Eljas, a beautiful place that even has its own dialect, "A Fala". Eljas is located in the Sierra de Gata, a small region boasting picturesque landscapes in northwestern Estremadura, a province near the Portuguese border in the southwest of Spain. The olives grow on traditional non-irrigated olive trees, capable of enduring a rougher climate.
The artisans behind the product
Favuzzi olive oil is produced by the Carrasco Lajas family, in the heart of the stunning Sierra de Gata National Park. Since the olive tree forms the main pillar for the village's economy, the Carrasco Lajas are very focused on both environmental protection and the region's local development, but their main ambition is to produce an oil of the best possible quality.
Uses
This perfectly balanced oil stands out with its notes of green olive, apple and banana and its bitter almond finish. Favuzzi olive oil is ideal for everyday use. Try it as is or in cooking, with fish, a carpaccio, fresh vegetables or salads.

Located in the Val di Sangro valley, the production facilities overlook 12 hectares of land where vegetables and tomatoes are grown. The de Laurentis family has produced several Italian specialties for two generations. Mr. Antonio is in charge of the land, while Nicola and his son, chef Dino, develop delicious, authentic recipes following Italian traditions. Production is in the hands of a small army of cooks busily tending the ovens.
Uses
This perfect marriage between olive oil and black truffle enhances salads, mashed potatoes and fresh pasta with parmesan. Black truffle olive oil is almost exclusively used as a finishing touch. Awarded by the Flos Olei as the top Monocultivar of 2020. This cultivar is found in all 6 olive oils we produce.
